Delicious “Singapore” noodles fit for any occasion, its super quick, super tasty and extremely easy to make as a mid week dinner. This dish offers interesting fusion flavors with curry powder and soy sauce.
A curry bowl packed full of veggies and flavour, fitting for any time of day or any season. This bowl will leave you feeling satisfied and energetic.
- 1 cup spicy cabbage kimchi
- 3 tbsp kimchi juice
- 2 packets of ramen noodles
- 2 blocks of tofu cubed
- 2 cups shiitake or oyster mushrooms
- 4 small heads of bok choy
- 6 cups vegetable broth
- 1 tsp ginger crushed
- 1 tbsp sriracha
- 2 tbsp soy sauce
- 1 tsp rice wine vinegar
Press tofu for 20 - 30 minutes
Slice mushrooms, wash and cut bok choy and chop up kimchi
Add oil to a large pot and sauté mushrooms and ginger until fragrant
Add in vegetable stock, soy sauce, rice wine vinegar, sriracha, kimchi and simmer for 5 minutes
Add noodles, tofu and bok choy, cover and simmer for 5 minutes, taste and spice to preference
Plate and serve warm!
