Joburg Chakalaka Bowl

Ingredients

  • 1 butternut large
  • 8 veggie sausages
  • 4 cups rice of choice
  • 1/4 cup olive oil
  • 3-4 cups cabbage sliced
  • 1 can baked beans
  • 1 onion medium, diced
  • 1-2 tomatoes diced
  • 1 carrot large
  • 1-2 chilli pepper diced
  • 1 green pepper medium, diced
  • 1 red pepper medium diced
  • 1/2 tsp ginger minced
  • 2 tsp garlic minced
  • 1/2 tsp thyme
  • 1/2 tsp smoked paprika
  • 1/2 tsp paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1 tsp cayenne pepper

Method

  1. Peel and cube your butternut, mix with cinnamon, ground coriander, salt, pepper, paprika and a dash of oil

  2. Preheat oven to 180 and cook butternut for 30 minutes, toss around every 10 minutes

  3. Cook rice as to packet instructions

  4. In a large saucepan, heat oil over medium heat.

  5. Add onion, cook until translucent

  6. Stir in; garlic, ginger, smoked paprika, curry, cayenne pepper, thyme and stir until fragrant. Add tomatoes, bell peppers, carrots and cabbage

  7. Simmer for about 5 minutes, stirring occasionally to prevent burns

  8. Finally add baked beans, continue cooking for about 2-3 minutes

  9. Assemble the bowl with rice on the bottom, top with chakalaka, roast butternut and diced sausage
