Kimchi Ramen

Ingredients

  • 1 cup spicy cabbage kimchi
  • 3 tbsp kimchi juice
  • 2 packets of ramen noodles
  • 2 blocks of tofu cubed
  • 2 cups shiitake or oyster mushrooms
  • 4 small heads of bok choy
  • 6 cups vegetable broth
  • 1 tsp ginger crushed
  • 1 tbsp sriracha
  • 2 tbsp soy sauce
  • 1 tsp rice wine vinegar

Method

  1. Press tofu for 20 - 30 minutes
  2. Slice mushrooms, wash and cut bok choy and chop up kimchi
  3. Add oil to a large pot and sauté mushrooms and ginger until fragrant
  4. Add in vegetable stock, soy sauce, rice wine vinegar, sriracha, kimchi and simmer for 5 minutes
  5. Add noodles, tofu and bok choy, cover and simmer for 5 minutes, taste and spice to preference
  6. Plate and serve warm!
